Organic Dominican Republic Cacoa Truffles

Only in the D.R. is a series where On the Scene D.R. features a special person, place, or food. This article in an Only in the D.R. recipe–Dominican Republic Cacoa Truffles.

With so many special people, places, and foods, the D.R. is an endlessly exciting place to visit or to live. This week I am going to share with you my simple, and quick recipe for a raw fresh healthy dessert. These are what I call Dominican Republic Coconut Cacoa Truffles. Ever heard the expression “death by Chocolate”? This taste treat is going to make you feel like you died and went to Cacao Paradise.

Notably, The Dominican Republic is one of the few places in the world where cocoa grows–a known super food by many in the healing professions. Therefore, I am fortunate enough to know a Domincan Republic cacoa farmer friend where I may buy it fresh. Unfortunately, I am a person with sugar addiction, and I do not consume refined sugar–so this recipe is made with dates–a natural sweeter with fiber.

The recipe below is the healthiest and richest dessert that I have ever Tasted. One one hand, it satisfies my sweet tooth, and on the other hand it is quite nutritious! If you are still addicted to sugar, and the dates do not offer enough sweetness, you may add a little liquid stevia.

Ingredients for Dominican Republic Cacoa Truffles

1/2 log of fresh hard dominican republic cocoa
12-15 dates or liquid honey or stevia to taste
One tablespoon of finely ground fresh Dominican republic organic coffee
1 tablespoon of cinnamon
One tablespoon of vanilla
1/2 cup of walnuts or pecans
1/2 cup of coconut flakes–love to use fresh coconut

Instructions for Making Dominican Republic Cacao Truffles

First, use a cutting board and sharpe knife to cut the hard, fresh cocao into small pieces. Next, employ a magic bullet or a food processor to grind up the dominican republic cacoa. Add the fresh organic coffee, and the cinnamon until all is ground into a fine poweder.

Next, add half of the fresh coconut flakes and 1/2 of the walnuts.

Now slowly, add the 12 dates, one at a time, until the mixture begins to form a moist claylike ball. use the food processor or magic bullet in small, short grinds. However, if the mixture is to dry, add vanilla for moisture, and if necessary, add more dates. This will depend on the level of humidity.

Once the Dominican Republic cacoa mixture is a moist ball, separate them and roll them into a truffle-sized balls. In addition, press in some of the ground walnuts and coconuts to make a tasty and healthy coating.

Finally, note that this mixture will make about 12-15 truffles. Freeze until ready to serve.
